Calas - A New Orleans Fritter

2 cups cooked rice
2 Eggs, beaten
6 Tablespoons Sugar
2 teaspoons Baking powder
1/2 cup Flour
1/2 teaspoon Vanilla
1/8 teaspoon Nutmeg (I used Pumpkin Pie Spice instead)
Dash Cinnamon
Oil for frying
Powdered sugar (the boys liked a mix of cinnamon and powdered sugar)

Mix the eggs, vanilla, and rice together. In a separate bowl, combine the sugar, baking powder, flour, and spices. Slowly blend the second mixture into the rice/egg mixture until a thick batter forms. Heat the oil to 350. CAREFULLY spoon in tablespoons of the mix into the oil. Cook until browned, turning once so both sides brown. Serve warm, sprinkled with powdered sugar.

Enjoy!

This is traditionally served for breakfast with coffee. It seemed to work just fine in the evening, even without coffee! LOL!

Graying Hair Remedy (Juicing Recipe)

From Juiceman's Power of Juicing, by Jay Kordich

One serving 8 oz.

*This won't keep the snow off the roof forever, but it may help ward off premature graying.*

1 (3-to 4-inch) wedge of cabbage
Handful of spinach
4 carrots

Note: Boiled or steamed cabbage loses a portion of the vegetable's vitamins and minerals and what is left is inorganic sulfur. The dead sulfur settles in the pockets of the stomach and often causes extreme gastric distress.

Cabbage is a good source of beta carotene, vitamin C, sulfur, and if grown in mineral rich soil, selenium, a trace element that plays a big role as a cancer-fighting agent...Cabbage is also inundated with the amino acid glutamine.

Hair Growth and Hair-Loss Prevention Tonic (Juicing Recipe)

From Juiceman's Power of Juicing, by Jay Kordich

One serving about 8 oz.

5-6 carrots
Handful of alfalfa sprouts
4 lettuce leaves

The silicon (in lettuce) helps hair health and growth and adds a glow to the skin. B complex vitamins, particularly folic acid and PABA, contribute as well to healthy skin. Buy crisp heads with leaves as dark as possible for the specific variety of lettuce.

Peanut Butter Cookies, Southern Style

I grew up on this version of peanut butter cookies and never liked any other types because of it! Whenever I make these for Christmas gift baskets, they are always a favorite.

Preheat oven to 350°F

Ingredients:

1 cup peanut butter

1 cup sugar

1 egg

1 teaspoon of vanilla

1-3 Tablespoons of all purpose flour

extra sugar

Mix the first four ingredients together until well mixed. Depending on how sticky your mixture is, you can add flour until you can form balls. I like to make my cookie balls about the size of a walnut. Place on ungreased cookie sheet a couple of inches apart from each other. Most people use a fork for flattening the cookies, but I like to use the bottom of a smooth glass. The bottom will need to be lightly oiled, which can be done simply by lightly pressing down one cookie. Then dip bottom of glass into extra granulated sugar, and lightly press onto already flattened cookie. From this point on, you will dip in sugar and then flatten remaining cookies. Bake 10-12 minutes. Cookies continue to harden while cooling. Allow to remain on cookie sheet a few minutes before removing to wax paper or Release foil.

For an extra treat, melt chocolate chips in the microwave, then spread chocolate over tops of cookies, or dipped frozen cookies half way into chocolate mixture creating half and half peanut butter and chocolate dips.

Enjoy!

Red Pepper Ringer (Juicing Recipe)

From Juiceman's Power of Juicing, by Jay Kordich

One serving 8 oz.

4 carrots
2-3 strips of red bell pepper
1/2 handful of parsley

(silicon, which is good for the hair, present in the peppers and parsley)

Other sources of silicon include apricots and lettuce.

Keep in mind that organic fruits and veggies are best. You don't want to be ingesting the chemicals used in growing conventional produce.

From Juiceman's Power of Juicing, by Jay Kordich

One serving about 8 oz.

1 large, ripe tomato
1/2 cucumber
1 stalk of celery

High in potassium, sulfur, and manganese, cucumbers also are an excellent source of chlorine and silicon....cucumber juice...may promote hair and fingernail growth and help prevent hair loss.
